
Saffron Poached Pears
Learn how to poach pears with this deliciously simple, dairy and gluten free saffron poached pears recipe. Pears are gently simmered in a spiced syrup until tender, then refrigerated overnight to steep, resulting in a rich and aromatic dessert. Serve with vegan ice cream or cream for an elegant finish.

Peel the pears (4 medium), leaving the stalk intact. Crush the pods (10 cardamom).

Combine all ingredients (pears, cardamom, sugar, vanilla, saffron, cinnamon) in a saucepan with water (1 litre), bring to a simmer, and gently poach the [pears] for about 2 hours or until tender. Remove from heat, allow to cool, then refrigerate overnight to steep.

Before serving, remove the [pears] and set aside to bring to room temperature.

Boil the syrup until reduced to a sticky glaze, about 250 ml. Drizzle about saffron glaze (2 tbsp) over the [pears], then serve with vegan ice cream (1 scoop) or vegan cream (1 dollop).
