Put the chai tea (2 bags), caster sugar (100 g) and the sticks (4 cinnamon) in a pan with water (300 ml) and simmer for 10 minutes, then remove the [chai tea bags]. Add the apple juice (1 litre) and pears (2) and bring just up to the boil.

Take off the heat, stir in the dark rum (150 ml) and add more [caster sugar] to taste if you wish. Ladle into heatproof mugs to serve, adding an extra splash of [dark rum] and a [cinnamon stick].
