Mix together the dressing ingredients in a jar or bowl. If the mixture is too thick, add a small splash of water as needed. Set aside.

Cook the soba noodles (6.3 oz) according to the package instructions in a saucepan. For us, this took about 5 minutes. Then drain.

Meanwhile, drizzle the vegetable oil (1 tsp) in a sauté pan over high heat. When hot, add in the shiitake mushrooms (4.9 oz) and frozen shelled edamame (1.5 cups) and cook for 5 minutes.

Then add the soba noodles (6.3 oz), and dressing. Let everything heat through.

Divide the noodles between your bowls, and top with sliced avocado (1 quantity), small radishes (6 quantity), green onion (1 stalk), and toasted sesame seeds (1 tbsp). Enjoy!
