Instructions

    Heat olive oil (1 tbsp) in a large, lidded pan over medium heat. Add the onion (1) and cook gently for 10 minutes until softened.

    Stir in garlic (3 clove), smoked paprika (1 tsp), ground cumin (0.5 tsp), dried thyme (1 tbsp), carrots (3 medium), celery (2 stalk), red pepper (1 whole), and yellow pepper (1 whole). Cook for 5 minutes.

    Add tomatoes (2 can), vegan stock (250 ml), courgettes (2 whole), and fresh thyme (2 sprig). Stir well, cover, and simmer for 25 minutes.

    Discard the thyme sprigs. Stir in the cooked puy lentils (250 g) and simmer for 5 minutes until warmed through. Serve with rice or mash.
