
Leek Parsnip Soup
This warming and comforting leek and parsnip soup is a delicious way to enjoy your vegetables. It's perfect for lunch, served with crusty bread.

Heat the olive oil (1 tbsp) in a large saucepan.

Add the leeks (2 large) and sauté for 10 minutes over a medium heat until soft. Stir often.

Add the garlic (2 cloves), stir well, and cook for a further 1 minute.

Stir through the parsnips (3 medium) and add a [pinch nutmeg].

Add the vegetable stock (1.5 litre) and bring to a boil.

Reduce the heat to a simmer, cover, and cook for 10-15 minutes until the parsnips are soft.

Allow to cool a little (approx. 15 minutes cooling time), then blend until smooth.

Return to the pan once blended and reheat. Season to taste with [salt and pepper].

Serve with crusty bread and some finely chopped [small handful flat leaf parsley].
