Instructions
- 1
In a small bowl, stir together warm water (0.5 cup), active dry yeast (1 packet), and granulated sugar (1 tsp). Wait 5 minutes until the yeast becomes foamy.
- 2
In a large bowl, mix coconut oil (0.33 cup), almond milk (0.5 cup), granulated sugar (0.33 cup), and sea salt (1 tsp). Stir in the yeast mixture and then add all purpose flour (2.75 cup). Knead for 4 minutes until smooth.
- 3
Brush a clean bowl with coconut oil (1 tsp), place the dough inside, cover, and let rise in a warm spot until doubled in size.
- 4
Combine dark brown sugar (0.5 cup) and cinnamon (1.5 tbsp) in a small bowl. Roll the risen dough into a 20x14-inch rectangle, brush with coconut oil (2 tbsp), and sprinkle the cinnamon sugar mix evenly over the surface.
- 5
Roll the dough into a tight log, slice into 12 rolls, and arrange in a greased baking dish. Cover and allow to rise for another hour.
- 6
Preheat your oven to 350°F and bake the rolls for 30 minutes or until they turn a light golden brown.
- 7
While the rolls cool for 10 minutes, whisk together powdered sugar (1.5 cup), almond milk (3 tbsp), and vanilla extract (0.5 tsp). Drizzle over the warm rolls and serve.
