
Homemade Smoky Ketchup
This vibrant homemade smoky ketchup is crafted from slow-cooked ripe tomatoes, enriched with tomato puree and aromatic smoked paprika. Infused with a touch of chipotle chili paste, onion, and garlic, it offers a perfectly balanced tangy and savory profile. Finished with white wine vinegar and caster sugar, this smooth sauce is an exceptional vegan alternative to store-bought varieties, ideal for dipping or dressing your favorite grilled meals.

Roughly chop the tomatoes (1.25 kg) and combine in a large pan with tomato puree (140 g), smoked paprika (1 tbsp), chipotle chilli paste (1 tsp), onion powder (2 tsp), garlic granules (0.5 tsp), fine salt (1 tsp), and black pepper ground (0.5 tsp).

Stir well, cover, and cook for 20 minutes over a medium heat until the tomatoes are soft.

Uncover and simmer for approximately 40 minutes, stirring regularly, until the mixture reduces to a thick sauce. Allow to cool slightly.

Blend the mixture until smooth, then push through a sieve into a clean deep pan to remove any remaining seeds or skins.

Stir in white wine vinegar (125 ml) and caster sugar (100 g). Simmer for a further 30 minutes, stirring frequently, until reduced to a thick yet pourable sauce.

Pour the ketchup into sterilised bottles or jars, seal, and store in the fridge once cooled.
