Instructions

  1. 1

Line a 9-inch square baker with two strips of criss-crossed parchment paper for easy removal later.

  2. 2

Stir rolled oats (1.75 cup), cinnamon ground (1 tsp), and sea salt (0.5 tsp) in a large mixing bowl.

  3. 3

Briefly blitz pecan halves (1 cup), pepitas kernels (0.5 cup), shredded coconut (0.25 cup), and mini dark chocolate chips (0.25 cup) in a food processor until broken into small pieces, then add to the oats.

  4. 4

Whisk creamy peanut butter (1 cup), maple syrup (0.5 cup), and vanilla extract (1 tsp) until well blended.

  5. 5

Pour the wet binder into the dry oat mixture and stir firmly until no dry spots remain and everything is evenly combined.

  6. 6

Transfer to the baker and pack the mixture down as firmly and evenly as possible using a flat-bottomed glass.

  7. 7

Refrigerate for at least 60 minutes or overnight to allow the oats to hydrate and firm up.

  8. 8

Lift from the baker using the parchment edges and slice into 16 bars with a sharp knife.
