Banana Bread Granola

If you want your house to smell like banana bread without actually baking banana bread, make this granola. This healthy, 30-minute granola tastes just like banana bread, loaded with protein, fiber, healthy fats, and omega-3s and 6s. It's crunchy, nutty, not too sweet, and super fragrant. Perfect for breakfast or an on-the-go snack, it can be enjoyed with yogurt, plant milk, smoothies, or ice cream.

Instructions

    Preheat oven to 350 degrees F (176 C).

    Combine the rolled oats (3 cups), raw walnuts (0.75 cup), raw pecans (0.5 cup), cane sugar (3 tbsp), sea salt (0.5 tsp), ground cinnamon (0.5 tbsp), and flaxseed meal (1 tbsp) in a large bowl.

    In a small saucepan, warm the coconut oil (0.25 cup), cup maple syrup (0.33 heaping), and vanilla extract (1 tsp) over medium-low heat until liquid. Remove from heat and whisk in the ripe banana (1 medium) puree. Pour the wet ingredients over the dry mixture and mix well.

    Spread the mixture evenly onto one or two baking sheets. Bake for [23-28 minutes] or until golden brown. Watch carefully as it can brown quickly. For a clumpy granola, do not toss during baking. For a more crumbly granola, toss/stir halfway through.

    Once visibly browned, remove from the oven and toss just a bit to let the heat escape. Cool completely on the baking sheet or in a heat-safe bowl. Store in an airtight container for up to two weeks.
