
Double Chocolate Granola
Start any day off right with a touch of chocolate! This delicious granola recipe is quick to make and perfectly crunchy. Enjoy it with plant-based milk or yogurt, or sprinkle it over your favorite smoothie bowls for an added treat.

Line a baking tray and preheat the oven to 340°F (170°C)*.

Add all the dry ingredients (rolled oats (2 cups), pumpkin seeds (0.5 cup), sunflower seeds (0.5 cup), walnuts (0.5 cup), pecans (0.5 cup), cocoa powder (0.33 cup), shredded coconut (0.25 cup), chia seeds (2 tbsp), salt (0.5 tsp)) to a food processor. Pulse to roughly chop the oats and nuts**.

Remove the blades from the food processor. If the blades can't be removed, transfer the contents to a large bowl instead. Add the maple syrup (0.5 cup), coconut oil (0.25 cup), and pure vanilla extract (1 tsp) and mix using a rubber spatula.

Transfer the mixture to the baking tray and spread it out evenly. Let the granola bake in the oven on the centre rack for 20 - 22 minutes, stirring halfway to ensure even baking.

Remove from the oven and allow the granola to cool completely. It will harden as it cools. Once completely cool, mix in the vegan chocolate (1.764 oz), and enjoy with plant-based milk or yogurt and fresh fruit.
