
Homemade Granola
Create your own healthy, vegan homemade granola with this simple mix-and-match formula. Whether you prefer loose toasted oats or big crunchy clusters, this recipe uses aquafaba as a clever plant-based binder to achieve the perfect texture without excess sugar or fat. Customize your batch with a variety of nuts, seeds, and dried fruits for a nutritious and delicious breakfast or snack.

Preheat oven to 150C/300F for loose granola or 140C/280F for clumpy granola. Line a large baking tray with baking paper.

In a large bowl, whisk together the maple syrup (0.33 cup), coconut oil (0.33 cup), and vanilla extract (1.5 tsp).

Stir in the rolled oats (360 g), coconut flakes (1 cup), mixed nuts (1 cup), cinnamon (1 tsp), and salt (1 pinch) until well coated.

For loose granola: Spread on a tray and bake for 35 minutes, tossing twice. Stir in dried fruit (0.5 cup) once golden and cool.

For clumpy granola: Stir dried fruit (0.5 cup) into the oat mix. Whisk aquafaba (6 tbsp) for 2 minutes until foamy, then fold into the granola.

Spread clumpy mix on the tray with a hole in the center. Bake for 45 minutes without stirring. Turn off oven, propping the door open, and let cool inside to set clusters.
