
Grilled Sesame Peach Tofu

To a medium saucepan over medium-high heat, combine fresh peaches (1 lb), lemon (1 juiced), and cane sugar (1.5 cups). Stir well and bring to a boil. Use a spatula or masher to break down the peaches to your desired consistency.

Reduce heat to medium and continue to boil, stirring frequently, until the mixture thickens and coats the back of a spoon (about 15-25 minutes). Remove from heat and let cool.

Preheat grill to medium-medium high heat (around 300-350°F / 150-175°C).

In a small bowl, whisk together cooled peach preserves (0.5 cup), minced garlic (3 cloves), rice wine vinegar (3 tbsp), soy sauce (2 tbsp), sesame seeds (1.5 tsp), onion powder (0.5 tsp), smoked paprika (0.5 tsp), cumin (0.5 tsp), and cinnamon (0.5 tsp).

Thread each strip of super firm tofu (1 block) onto a wooden skewer. Lightly spray or brush with avocado oil (2 tbsp). Place skewers on the grill and cook for 1-2 minutes per side, flipping until all four sides are grilled.

Brush the grilled tofu with the peach sesame sauce, rotating every 30 seconds and brushing as you go, until coated and slightly caramelized. Remove from heat and serve with extra sauce.
