
Grilled Peach Bruschetta
This delightful take on classic bruschetta features sweet, deeply caramelized peaches perfectly complementing savory tomatoes. Using canned peaches, this recipe brings a taste of summer year-round, but fresh peaches can be used when in season.

Bring a grill pan to medium-high heat. Then cook the peaches (2) until deeply caramelized, around 3 - 4 minutes on each side. Set aside to cool down slightly.

Add the cherry tomatoes (2 cups), garlic (1 clove), fresh basil (0.5 cup), extra-virgin olive oil (1 tbsp), salt (0.125 tsp), and black pepper (0.125 tsp) to a large bowl. Set aside.

Once cool enough to handle, dice the [peaches].

Add them to the bowl and stir to combine. Set aside.

Heat the olive oil (1 tbsp) in a grill pan over medium heat. Toast the sourdough (4 slice) until golden on both sides.

To assemble, spread the vegan cream cheese (0.75 cup) on the toasted [sourdough] and top with the peach and tomato mixture. Enjoy!
