
Grilled Pesto Tofu Sliders
These Grilled Pesto Tofu Sliders are bright, herby, and seared to crispy perfection. Every bite of this handheld main is packed with fresh summer flavor. Optionally Gluten-Free.

Slice the tofu, super firm (16 oz) into 6 thick pieces. Transfer to a ziploc bag or container. Add the vegan pesto (0.5 cup) and toss to coat. Marinate for at least minutes (20), or overnight. Preheat the grill to medium-high (350F to 400F).

Place the tofu on the grill and cook for 5 minutes (3 to). Flip the tofu. Place the ciabatta roll (6 mini) cut-side down on the grill for a nice char. Grill for an additional 5 minutes (3 to), then transfer everything to a cooling rack. *Pro tip: Brush buns with oil from the sun dried tomatoes (0.333 cup) for extra flavor.

Assemble each roll with a piece of grilled tofu, arugula (2 oz), roasted red peppers (7 oz), sun dried tomatoes (0.333 cup), and leftover pesto from the marinade bag. Serve warm. Leftover tofu can be stored in the fridge for up to 5 days.
