
Gochujang Winter Squash Sliders
These Gochujang Winter Squash Sliders feature shredded squash tossed in maple, garlic, and gochujang. Serve them on slider buns or in tacos with a creamy horseradish spread or vegan wasabi mayo. This easy and flavorful vegan recipe is perfect for a satisfying meal.

Heat oil (1 tsp) in a skillet over medium heat. Add winter squash (1.5 cups) and a generous pinch of [salt]. Toss to coat, cover and cook for 5 minutes. Add the gochujang (2.5 tbsp), maple syrup (1 tbsp), garlic (1 tsp), ginger (1 tsp) and mix well. Cover and cook until the [winter squash] is tender to your preference (5 to 10 minutes, depending on the size of the [winter squash] pieces). Taste and adjust [salt] and spice. Add [sesame seeds] for garnish.

Prepare the [shredded cabbage] or other desired veggies. Prepare the [prepared vegan wasabi mayo] (wasabi + vegan mayo or cashew cream). Layer the cooked [winter squash] on [buns] with toppings and serve.
