Add the unsweetened soy milk (1.33 cup), apple cider vinegar (1 tbsp), and pure vanilla extract (2 tsp). Mix until just combined, being careful not to overmix. Let the batter rest for 3 minutes.

Heat a non-stick crepe pan over medium-high heat. Add vegetable oil (1 tbsp) as needed, and pour 0.25 cup of the pancake batter for each pancake.
