Preheat a nonstick pan over medium-high heat. If your nonstick pan needs more slip, you can lightly oil the pan.

In a medium bowl, mix together all-purpose flour (1 cup), baking powder (2 tsp), salt (0.5 tsp), neutral oil (2 tbsp), banana (1 mashed), plant-based milk (1 cup), vanilla extract (1 tsp), and brown sugar (2 tbsp). Gently mix until the batter is smooth, but there’s no need to remove all the lumps.

Scoop the batter with a measuring cup (0.25 cup) and pour onto the preheated pan. Once bubbles begin to form, flip the pancake over and cook the other side until light brown.
