
Easy Tomato Soup
This quick and easy tomato soup comes together in just 20 minutes with 6 simple ingredients. It's full of flavor, creamy, and is naturally vegetarian, vegan, and gluten-free. Enjoy with fresh or canned tomatoes for a comforting and delicious meal.

Heat the oil (1 tbsp) in a large pot over a medium heat. Add the onion (1) and cook for 4 minutes until softened. Sprinkle in the plain flour (2 tbsp) and stir well.

Add the fresh tomatoes (750 g), vegetable stock (2.25 cups), and tomato puree (2 tbsp), stir well then bring to the boil. Reduce the heat and simmer for 10 minutes.

Puree with a hand held blender or food processor. Add more water to thin, if desired.

Ladle the soup into bowls and serve. If desired, top with fresh herbs and seeds.
