
Garlicky Greens Crostini
These simple and healthy crostini feature wilted garlicky greens, a fantastic way to enjoy more vegetables. Served on hot vegan crostini with a hint of lemon, this dish is a delicious and light appetizer or snack.

Take handfuls spring greens (3 large) (cavolo nero, cabbage or Swiss chard) and strip the leaves off the stalks.

Add garlic (3 cloves) to a pan of salted water and bring to the boil, then add the [spring greens]. Cook until tender, then drain well in a colander and allow to cool.

Squeeze out any excess water from the [spring greens], mash the [garlic], season to taste with [sea salt] and [freshly ground black pepper], and drizzle with [extra virgin olive oil]. Toss well.

Divide the seasoned greens onto each of your hot crostini (12 slices), then drizzle with more [extra virgin olive oil] and finish with lemon juice (1 squeeze).
