Instructions

    Combine the orange juice (250 ml), caster sugar (60 g), and cointreau (100 ml) in a saucepan and bring the mixture to a gentle simmer.

    In a small bowl, whisk together the cornflour (1 tbsp) and water (1 tbsp) until smooth, then stir this slurry into the simmering liquid.

    Continue to simmer for about 1 minute until the sauce begins to thicken.

    Fold in the clementines (6) segments and remove from heat. Allow to cool before serving, adding a splash more Cointreau if desired.
