In a large mixing bowl, whisk together non dairy milk (1 cup), unsweetened applesauce (0.25 cup), coconut oil (0.33 cup), and vanilla extract (1.5 tsp).

Add all purpose flour (2 cup), cane sugar (0.75 cup), baking powder (1 tbsp), and salt (0.5 tsp) to the wet ingredients and mix with a spatula until combined.
