
Chilli Garlic Naan
These chilli garlic naan are a must-have with any curry feast. Soft and pillowy, they are laden with aromatic garlic and chilli, perfect for scooping up delicious curry. Cook them quickly to ensure the chilli flecks are cooked but not burnt.

In a bowl, combine all naan ingredients and knead until a uniform dough forms. Add more [water] if needed. Knead for 7 minutes on a floured surface. Form into a ball, place in a lightly oiled bowl, cover, and let rest in a warm place for 90 minutes until doubled in size.

Finely chop the chillies (6 green) and cloves (3 garlic). Add them to a small bowl with the salt (1 tsp), oil (3 tbsp), and [chilli flakes]. Mix well to combine.

Place the dough on a floured surface and knead for 2-3 minutes. Form into a ball, then cut into four equal quarters. Roll each quarter into a 30cm long oval shape. Spoon a quarter of the chilli mix over each naan, then gently roll with a rolling pin to press the [chilli flakes] and garlic into the surface.

Heat a frying pan on high heat with a good splash of [vegetable oil]. Once hot, place one naan chilli-side up. Cook for 2 minutes until bubbles appear and the bottom is golden brown. Flip and cook for a further 1 minute until browned. Remove, place on a chopping board, and quickly rinse the pan. Re-oil and repeat for the remaining naan.
