Sweet Potato Chilli Lime Soup

This delicious sweet potato and chilli soup is smooth, spicy, and deeply comforting. Fresh lime juice and zest are added just before serving, lifting the fiery flavours to new heights. Served with warm crusty bread, this healthy and flavorful soup is a perfect autumn or winter meal.

Instructions

    Heat the olive oil (1 tbsp) in a large saucepan, add the onion (1) and garlic (1 clove), then cook for 4 mins until softened.

    Add the sweet potato (3) and chili flakes (1 pinch) and cook for 1 min.

    Pour in the vegetable stock (1.2 litre) and simmer for 15 mins.

    Remove from the heat, allow to cool slightly, then blend until smooth using an electric hand blender. Stir in the zest and juice from lime (0.5) and serve with crusty bread (4 slice).
