
Air-Fryer Taquitos with Cauliflower and Black Beans

Preheat your air fryer to 320°F for minutes (8).

For the filling, in a saucepan, cook the [chopped fresh mushrooms], finely chopped onion (1 cup), finely chopped green bell pepper (1 cup), and minced garlic (1 clove) in water (0.25 cup) over medium heat for minutes (10) until the onion is translucent, stirring occasionally. Add 2 tbsp water (1 to) as needed to prevent sticking. Stir in the black beans (1 can), tomato paste (2 tbsp), and salt-free taco seasoning (4.5 tsp). Cook for minutes (5), stirring occasionally. Remove from heat. Stir in the riced cauliflower (2 cup), lemon juice (1 tbsp), and sea salt (0.25 tsp). Taste and adjust seasoning.

Warm the tortillas (10 corn) according to package directions and wrap them in a kitchen towel to keep warm. To assemble, lay a warm tortilla on a clean surface. Spoon [tbsp filling] horizontally across the middle. Starting from the closest edge, roll up the tortilla tightly. Place assembled taquito seam-side-down on a tray lined with an additional kitchen towel and keep covered. Repeat with remaining tortillas and filling.

Place half of the taquitos, or as many as can fit, seam-side-down, in the air fryer. If using, very lightly mist them with [cooking spray]. Air-fry for minutes (6) or until crisp and slightly browned. Serve warm with guacamole (1.25 cup).
