
Green Pea Edamame Mint Dip
This vibrant dip is a fresh and protein-packed take on classic hummus, swapping chickpeas for green peas and edamame. It makes for a beautifully green spread, perfect to enjoy with fresh vegetables, crackers, or in a sandwich.

Cook the frozen green peas (140 g) and frozen shelled edamame (140 g) in a saucepan of boiling water (45 ml) for 3 minutes, then drain.

Place all ingredients: frozen green peas (140 g), frozen shelled edamame (140 g), water (45 ml), tahini (48 g), olive oil (15 ml), lemon (0.5) juiced, fresh mint (10 leaves), garlic (2 cloves), ground cumin (2 g) and salt (0.5 tsp) into a food processor and blend until creamy.

Taste test the dip and adjust seasoning to your liking. Add more [tahini] for a creamier consistency or more [lemon] for extra zest.

Plate the dip, garnish with [toasted sesame seeds], [radish], or [toasted pine nuts] if desired, and enjoy!
