Instructions

Peel and roughly chop the potatoes (2), onions (2), and cloves (2 garlic).

In a large saucepan, heat olive oil (2 tbsp), then sauté the [chopped potatoes], [onions], and [garlic] until the [onions] are translucent.

Add the vegan stock (400 ml) and simmer until the [potatoes] are soft. Chop and add the watercress (3 bunches) and simmer for a further 4 minutes.

Using a hand blender, blend the soup until smooth.
