
Vibrant Roasted Beetroot Hummus
This vibrant beetroot hummus is both visually stunning and packed with flavor. The roasted beets add a sweet, earthy depth, creating a subtle complexity and beautiful color. It's a wholesome and delicious dip, perfect for snacking.

Line a baking tray and preheat the oven to 400°F (200°C)*.

Cut the beetroot (2) into 0.5 inch (1 cm) slices and transfer to the baking tray. Roast for 40 - 45 minutes, or until cooked through. Set aside to cool.

Add all the ingredients (cooked chickpeas (1.5 cup), water (0.25 cup), lemon (1), tahini (2 tbsp), olive oil (1 tbsp), cloves (2 garlic), and salt (0.5 tsp) and the roasted beetroot) to a food processor and blend until smooth. Taste test and adjust the lemon, tahini, oil, and salt to your liking.
