Prepare gluten free penne pasta (1 pound) according to package instructions. Once cooked, drain and set aside.

Warm olive oil (1 tbsp) in a large saucepan or skillet. Add garlic (4 clove) and sauté for minute (1). Stir in dried oregano (1 tbsp) and tomato paste (2 tbsp) and cook for minute (1). Stir in the roasted red peppers (3 whole).

Add unsweetened almond milk (1 cup), water (0.5 cup), gluten free all purpose flour (2 tbsp), and nutritional yeast (0.25 cup) and stir to combine.

Transfer the sauce to a blender or food processor and process for minute (1) or two until you have a smooth, creamy texture.

Pour the creamed sauce back into the saucepan/skillet. Stir in the cooked [gluten free penne pasta] until it's completely coated in sauce.
