
Vegan Peppermint Patties
These 4-ingredient vegan peppermint patties are creamy, minty, and coated in rich chocolate—an easy, no-bake treat perfect for holiday gifting and year-round! They are ridiculously easy to whip up, and even kids can get involved.

Line a full-size [baking sheet] with [parchment paper] or silicone mats and refrigerate. In a large bowl, use an electric mixer to combine the plant milk (3 tbsp), peppermint extract (1 tsp), and powdered sugar (4 cups) until it resembles playdough. If too sticky, add more [powdered sugar] (0.25 cup at a time). If too dry, add more [plant milk] (1 tbsp at a time).

Scoop dough (1 tbsp) into your hand, roll into a ball, and flatten into a 0.5 inch thick disc. Place on the chilled tray. Repeat until all dough is used. Refrigerate for minutes (60) (or freeze for 20 minutes).

Melt the vegan chocolate (2 cups) chips in a microwave-safe bowl (30-second intervals, stirring each time) until completely melted. Do not overcook.

Using a fork or spoon, dip one of the peppermint patties into the [vegan chocolate] and allow excess to drip off. Place back on the [baking sheet]. Repeat until all patties are covered. Refrigerate for at least minutes (120) before serving.
