
Crispy Quinoa Patties with Creamy Tahini Sauce
These crispy quinoa patties are a perfect vegan meal prep option, packed with flavorful spinach and juicy tomatoes. Serve them with a creamy tahini sauce for a satisfying lunch or dinner. They are gluten-free and loaded with plant-based protein.

For the sauce: Combine all ingredients in a bowl and whisk until smooth. Taste and adjust seasoning. Chill until ready to serve.

For the patties: Heat coconut oil (1 tsp) in a pan over medium heat. Sauté garlic (3 clove) and chopped onion (0.5 cup) for 5 minutes. Add raw spinach (3 cup) and a pinch of [salt] and [pepper], then sauté for 2 minutes until wilted. Remove from heat and let cool slightly.

In a large mixing bowl, combine cooked quinoa (1.5 cup), the cooled veggie mixture, egg (2 vegan), gluten free flour (5 tbsp), and tomatoes (0.33 cup). Stir until well combined.

Scoop heaping tablespoons of the mixture and form into about 10 small patties using your hands.

Heat coconut oil (1 tbsp) in the same pan over medium-high heat. Cook patties for 2-3 minutes per side until crispy. Adjust heat as needed and cook in batches if necessary.
