Instructions

    In a large mixing bowl, whisk together the rolled oats (1.5 cup), all purpose flour (1 cup), desiccated coconut (1 cup), baking soda (1 tsp), salt (0.5 tsp), and cinnamon (1 tsp).

    In a separate bowl, cream the vegan butter (0.5 cup) and light brown sugar (1 cup) until smooth, then mix in the maple syrup (3 tbsp) and vanilla extract (1 tsp).
