
Apple Pie Baked Oatmeal

Preheat the oven to 350℉. Lightly grease a 9" x 9" baking dish. In the dish, combine old fashioned oats (2 cups), baking powder (1 tsp), chia seeds (1 tbsp), apple pie spice (1.5 tsp), salt (1 tsp), chopped pecans (3 tbsp), and shredded coconut (1 tbsp). Mix well.

Add maple syrup (0.25 cup), applesauce (0.33 cup), and warm non-dairy milk (1 cup) to the dry ingredients. Mix thoroughly and spread evenly in the dish.

Let the mixture sit for mins (15) to allow the oats to soak up the liquid. Meanwhile, prepare the apple pie layer.

In a separate bowl, combine apple (1 sweet) (peeled and chopped small), maple syrup (1 tbsp), brown sugar (1 tbsp), cinnamon (1 tsp), and chopped pecans (2 tbsp). Toss to coat.

Spread the apple mixture evenly over the oatmeal in the baking dish.
