This wholesome one-bowl banana bread is both vegan and gluten-free, using simple pantry staples for a perfect texture. Naturally sweetened with maple syrup and coconut sugar, it features a nutty crunch from walnuts and a tender, moist interior. Preheat your oven to 350 degrees F (176 C) and line a loaf pan with parchment paper. In a large mixing bowl, combine flaxseed meal (1 tbsp) and water (2.5 tbsp) and let rest for 5 minutes.

Add bananas (3) to the bowl and mash well with a fork until mostly smooth.

Whisk in almond butter (0.25 cup), avocado oil (3 tbsp), coconut sugar (0.5 cup), maple syrup (2 tbsp), sea salt (0.5 tsp), and almond milk (0.75 cup) until well combined.

Add baking powder (1 tbsp), almond meal (1.75 cup), gluten free flour (1.25 cup), and gluten free oats (1.33 cup). Stir well and fold in half of the walnuts (0.5 cup).

Pour the batter into the loaf pan, smooth the top, and sprinkle with the remaining [walnuts]. Bake for 60 to 75 minutes until firm and golden brown.
