Instructions

  1. 1

Preheat your oven to 375 degrees.

  2. 2

Oil your bread pan with [coconut oil].

  3. 3

In a large bowl, mash the bananas (4 ripe) well with a fork until no large chunks remain.

  4. 4

Add brown sugar (0.5 cup), coconut oil (2 tbsp), unsweetened applesauce (1 tbsp), and vanilla (1 tsp) to the bananas. Stir with a silicone spatula.

  5. 5

Sift in the flour (1.5 cups), baking powder (1.5 tsp), baking soda (0.5 tsp), cinnamon (0.25 tsp), and nutmeg (0.125 tsp). Add a pinch of [salt].

  6. 6

    Stir just until combined.

  7. 7

Gently fold in chopped walnuts (0.25 cup) if using.

  8. 8

Pour the batter into the greased bread pan and tap the bottom to level it evenly.

  9. 9

In a small bowl, combine sparkling sugar (1 tbsp) and cinnamon (1 tsp) for the optional topping, and sprinkle evenly over the batter.

  10. 10

Bake for 35-45 minutes. A toothpick inserted should come out clean. If the top browns too quickly, cover with foil and continue baking in 5-minute intervals.

  11. 11

Remove from oven and let cool in the pan for 15 minutes. Then carefully remove and place on a cooling rack until completely cooled.
