Instructions

    Place unsweetened plain almond or coconut milk (0.5 cup) in a mixing bowl and microwave for minute (1). Alternatively, heat in a saucepan until simmering, then return to bowl.

    Add dairy-free dark or semisweet chocolate (1.25 cup) to the warm milk and let sit undisturbed for minutes (2) to melt. Cover to aid melting.

    Gently stir with a wooden spoon until combined. Add vegan butter (0.5 cup) (softened) and cover. Let rest for minutes (10) to meld.

    Beat the mixture with an electric mixer. Gradually add organic powdered sugar (1 cup) (sifted) and mix. Refrigerate for minutes (120) (1-2 hours) until slow to move when tipped.

    Remove from fridge and beat again. If needed, add organic powdered sugar (0.25 cup) at a time, beating until light and fluffy. For a thicker consistency, a total of organic powdered sugar (1.75 cups) and minutes (45) of chilling is suggested.

    Use on cupcakes, cakes, or quick breads. Store frosting on baked goods at room temperature for several days, or in the fridge for up to days (7) covered.
