Instructions
- 1
Whisk ground flaxseed (1 tbsp) with water (3 tbsp) in a small bowl. Let it sit for 10 minutes to form a thick gel.
- 2
Preheat your oven to 180C and line an 8x8-inch square pan with parchment paper.
- 3
In a mixing bowl, combine all purpose flour (1 cup), baking soda (0.5 tsp), and salt (0.25 tsp). Mix well and set aside.
- 4
In a separate large bowl, cream together plant butter (6 tbsp), white sugar (0.25 cup), and brown sugar (6 tbsp) until smooth.
- 5
Add vanilla extract (1 tsp), molasses (1 tbsp), and the prepared flax egg to the creamed mixture. Stir until combined.
- 6
Gradually incorporate the dry mixture into the wet ingredients until just combined, then fold in vegan chocolate chips (1.5 cup).
- 7
Transfer the batter into the lined pan and bake for 15-17 minutes until the edges are golden. Cool completely in the pan before slicing.
