Instructions

    Preheat oven to 375F and lightly grease a 9x13 inch casserole dish.

    Bring water (3 cups) to a boil. Pour the hot water over the raw cashews (1.5 cups) and let soak for minutes (5). Drain and add cashews to a high-powered blender with water (0.75 cup), fresh lemon juice (3 tbsp), nutritional yeast (4 tbsp), clove (1 garlic), onion powder (0.5 tsp) and salt (1 tsp). Blend until smooth and creamy. Set aside.

    Prepare ziti pasta (1 lb) according to package instructions. Drain and add to the casserole dish.

    Cook vegan ground beef (16 oz) in a pan until browned.

    Pour marinara sauce (24 oz) and cooked [vegan ground beef] over the [ziti pasta] and stir. Spoon the [cashew cheese] on top in large dollops, stirring in slightly to leave pockets.

    Optionally, sprinkle with vegan shredded mozzarella cheese (2 cups) and/or vegan parmesan (0.25 cup). Bake, uncovered, for minutes (25) until bubbly. Serve immediately, garnished with [chopped fresh basil] or [chopped fresh parsley].
