Instructions

    Line a baking tray and preheat the oven to 400°F (200°C)*.

    Rinse and drain the cooked chickpeas (2 cup) if from a jar or can, and dry well using a kitchen cloth.

    Rinse the frozen green peas (1 cup) with warm water until defrosted. Then using your hands, squeeze as much liquid out of the [frozen green peas] as possible.

    Add all of the falafel ingredients to a food processor and blend until smooth. Let the mixture sit for 5 minutes to firm up.

    Scoop up a heaping tablespoon of the mixture at a time and shape into small patties. Coat your hands with a bit of [all purpose flour] to keep the mixture from sticking**.

    Brush a generous amount of olive oil (1 tbsp) on both sides of each patty on the baking tray.

    Bake on the centre rack of the preheated oven until golden, about 30 minutes, giving the patties a flip once halfway.

  8. 8

    Enjoy the patties in a [pita bread] wrap, nourish bowl, or salad with vegan tzatziki (1 cup), hummus (1 cup), romaine lettuce (1 cup) and cherry tomatoes (0.75 cup).
