
Sticky Hoisin Mushroom Bao
Stemming from Chinese cuisine, bao refers to steamed bread buns that are light and airy in texture. In recent years, the term "bao" has become popular, especially the "Gua Bao" style, which is an open-faced bao resembling a taco. Packed full of flavor, these sticky hoisin mushroom bao buns are the perfect vegan dinner.

Prepare the vegetables. Chop any large mushrooms (250 g) into smaller pieces. Peel and mince the ginger (10 g). Slice the cucumber (5) and carrot (1) into matchsticks. Pick the fresh coriander (10 g) leaves.

Heat olive oil (1 tbsp) in a large pan over medium-high heat. Add the mushrooms (250 g) and cook until caramelized. Stir in the ginger (10 g), vegan hoisin (2 tbsp), and soy sauce (1 tbsp). Bring to a simmer, coating the mushrooms, and reduce until sticky.

Warm the bao buns (6 vegan) according to package instructions. Fill each bun with the sticky mushroom mix, then top with the cucumber (5) matchsticks, carrot (1) matchsticks, and fresh coriander (10 g) leaves.
