Drain and press the extra firm tofu (300 g) to remove excess water. Place the tofu between a clean tea towel with a heavy item on top for at least 20 minutes. Slice the tofu into triangles or cubes.

In a small bowl, combine the sweet soy sauce (3 tbsp), rice vinegar (1 tbsp), cloves (1.5 garlic) (grated), and red pepper flakes (0.5 tbsp). Add corn starch (1 tbsp) and water (3.5 tbsp), then whisk until smooth.

Coat the pressed tofu pieces thoroughly in the remaining corn starch (3 tbsp).

Heat vegetable oil (3 tbsp) in a non-stick pan over medium-high heat. Add the tofu in a single layer, ensuring pieces do not touch. Pan-fry for a few minutes on both sides until golden and crispy.

Pour the prepared glaze into the pan. It will bubble instantly. Quickly turn all the tofu pieces to coat them thoroughly. Serve immediately on a dish.
