Instructions

    Mix chickpea flour (1 cup), warm water (1 cup), garlic powder (0.5 tsp), and baking powder (1 tsp) in a bowl. Cover and rest for 30 minutes for best results.

    Preheat your oven to 200°C. Whisk olive oil (1 tsp) and salt (1 pinch) into the rested chickpea batter.

    Line a tray with parchment paper and coat with a little oil. Pour in the batter and bake until it begins to firm up.

    Thinly slice red onion (1 small) and prepare the vegan mozzarella (4.5 oz), olives (1 handful), and sweetcorn (0.5 cup).

    Remove the base from the oven. Spread tomato paste (4 tbsp) across the crust and sprinkle with dried oregano (1.5 tbsp).

    Layer on the onion slices, vegan cheese, sweetcorn, olives, and fresh basil (1 tbsp).

    Bake for another 12 minutes until the vegan cheese has melted and the toppings are hot. Remove and garnish with arugula (1 handful).
