Socca Pizza
This gluten-free socca pizza uses a protein-rich chickpea flour crust for a healthy and indulgent meal. Topped with tangy tomato paste, sweetcorn, olives, and melted vegan mozzarella, it is a flavorful plant-based alternative to traditional dough-based pizza. Perfectly crispy and ready in 30 minutes, this dish works wonderfully as a hearty main or a snack.
Instructions
- 1
Mix chickpea flour (1 cup), warm water (1 cup), garlic powder (0.5 tsp), and baking powder (1 tsp) in a bowl. Cover and rest for 30 minutes for best results.
- 2
Preheat your oven to 200°C. Whisk olive oil (1 tsp) and salt (1 pinch) into the rested chickpea batter.
- 3
Line a tray with parchment paper and coat with a little oil. Pour in the batter and bake until it begins to firm up.
- 4
Thinly slice red onion (1 small) and prepare the vegan mozzarella (4.5 oz), olives (1 handful), and sweetcorn (0.5 cup).
- 5
Remove the base from the oven. Spread tomato paste (4 tbsp) across the crust and sprinkle with dried oregano (1.5 tbsp).
- 6
Layer on the onion slices, vegan cheese, sweetcorn, olives, and fresh basil (1 tbsp).
- 7
Bake for another 12 minutes until the vegan cheese has melted and the toppings are hot. Remove and garnish with arugula (1 handful).
