Simple Baked Tofu

This simple baked tofu uses just three core ingredients to transform everyday tofu into golden, satisfyingly crunchy nuggets. With a pillowy interior and a perfectly seasoned exterior, these versatile cubes add clean plant protein to any salad, stir-fry, or grain bowl.

Instructions

    Preheat the oven to 425ºF (218ºC) and arrange an oven rack in the top third. Line a rimmed sheet pan with parchment paper.

    Slice the extra-firm tofu (1 block) into 4 slabs. Wrap them in a dish towel and place a heavy book on top to press for 10 to 15 minutes.

    Cut the pressed tofu into 0.5 to 0.75 inch cubes.

    In a large bowl, combine the tofu cubes with olive oil (1.5 tbsp), kosher salt (1 tsp), and black pepper (0.25 tsp). Toss gently to coat.

    Add the potato starch (2 tbsp) and toss as gently as possible until the tofu is evenly coated.

    Arrange the tofu on the sheet pan in a single layer. Bake for 15 minutes.

    Flip the tofu pieces with a spatula and bake for another 15 minutes, or until golden and crisp.
