
Whole Grain Seeded Bread
Hearty and wholesome, this seeded whole grain bread is simple to make with just nine healthy ingredients. Featuring a mix of whole wheat pastry flour, sunflower seeds, and rolled oats, it offers a tender interior and a perfectly crusty exterior. Ideal for morning toast, sandwiches, or even vegan French toast, it is a versatile loaf that is naturally sweetened and fiber-rich.

In a large mixing bowl, combine warm water (1.5 cup), instant yeast (0.75 tbsp), maple syrup (2 tbsp), salt (0.5 tbsp), flaxseed meal (1 tbsp), whole wheat flour pastry (2 cup), and all purpose flour (1.75 cup). Stir until a sticky, rough dough forms.

Grease the bowl with oil, return the dough, cover, and let rise for 120 minutes at room temperature and 120 minutes in the refrigerator.

Turn the dough onto a floured surface. Create a small hole and add sunflower seeds (2 tbsp) and rolled oats (2 tbsp). Knead for about 20 turns until elastic, then form into a loaf shape.

Place the dough seam-side down in a greased loaf pan. Sift a light coating of flour over the top and let rest for 45 minutes.

Preheat the oven to 425 F (218 C) and place a metal pan on the lowest oven rack. Have 1 cup of hot water ready.

Slash the top of the loaf 2 or 3 times with a knife. Place in the oven, carefully pour the hot water into the bottom pan to create steam, and bake for 30 minutes until golden brown.

Rest the loaf in the pan for 5 minutes, then transfer to a rack to cool completely before slicing.
