Add fresh cilantro (1 bunch), garlic (2 cloves), roasted pepitas (0.5 cup), sea salt (1 tsp), jalepeno (1) (optional), smoked paprika (0.25 tsp), lime juice (1 large), and extra virgin olive oil (0.33 cup) to a food processor and blend until your ideal pesto texture is achieved. Add water or more [extra virgin olive oil] to thin, 1 tbsp at a time.
