
Crispy Onion Bhajis
These golden onion bhajis are incredibly easy to make and the perfect vegan side dish for any Indian feast. A spicy batter of aromatic spices and protein-rich gram flour coats thinly sliced onions, fried until perfectly crisp. Healthy and flavorful, they provide a delicious gluten-free alternative to classic appetizers.

Half fill a large pan with vegetable oil (500 ml) and heat to 175°C.

In a mixing bowl, combine gram flour (150 g), turmeric (1 tsp), paprika (1 tsp), ground coriander (1 tsp), ground cumin (1 tsp), fennel seeds (1 tsp), and chopped fresh coriander (1 bunch). Season with salt and pepper to taste.

Gradually whisk in water (150 ml) until you achieve a thick paste.

Toss the sliced onion (4 white) in the batter. Use tongs to carefully lower small portions of the mixture into the hot oil. Fry for 4 minutes, turning occasionally, until golden and crisp.

Remove with a slotted spoon and drain on kitchen paper. Serve warm with chutneys.
