Instructions
- 1
Drizzle the vegetable oil (1 tbsp) in a large pot over medium-high heat. When hot, add the garlic (4 clove), onion (1 large), vegetable bouillon (2 cube), and chili flakes (1 tsp). Cook for 2 - 3 minutes.
- 2
Then add the uncooked penne pasta (3 cup), passata sauce (3 cup), water (1.5 cup), hummus (0.75 cup), and nutritional yeast (3 tbsp) to the pot.
- 3
Reduce heat to medium, partially cover with a lid, and cook for 10 minutes. Check on the pasta a few times and stir to prevent sticking to the bottom of the pot.
- 4
Add the zucchini (1 quantity), vegan cooking cream (0.75 cup), roasted red pepper (1 jar), and marinated artichoke hearts (0.5 cup). Cook until the pasta is al dente, about another 5 minutes.
- 5
Stir in the arugula (1.5 cup) when ready to serve. Garnish as desired, and enjoy!
