Instructions

    In a food processor, blend the rolled oats (2 cup) into a flour. Alternatively, use store-bought [oat flour].

    Combine all the pancake ingredients (unsweetened soy milk (1 cup), unsweetened applesauce (0.333 cup), maple syrup (2 tbsp), refined coconut oil (1 tbsp), ground cinnamon (2 tsp), baking powder (1 tsp), pure vanilla extract (1 tsp), and salt (0.5 tsp)) in a large bowl.

    Preheat a large pan over medium-high heat with [oil]. When hot, spoon about 0.25 cup of batter onto the pan for each pancake. Cook for about minutes (2).

    When the bottom becomes golden, flip and cook for another minutes (2), or until lightly golden.
