In a food processor, blend the rolled oats (2 cup) into a flour. Alternatively, use store-bought [oat flour].

Combine all the pancake ingredients (unsweetened soy milk (1 cup), unsweetened applesauce (0.333 cup), maple syrup (2 tbsp), refined coconut oil (1 tbsp), ground cinnamon (2 tsp), baking powder (1 tsp), pure vanilla extract (1 tsp), and salt (0.5 tsp)) in a large bowl.
