Mushroom Gyros Wraps

These flavorful gyros are packed with seasoned mushrooms, offering a delicious Greek-inspired meal. The king oyster mushrooms provide a meaty texture, perfectly complementing the fresh tomatoes, red onion, cucumber, and homemade tzatziki, all wrapped in a soft flatbread. Serve this fantastic flavor fusion with a side salad or fries.

Instructions

    Prepare the souvlaki ingredients: Peel and slice the onion (1 red). Peel and mince the cloves (2 garlic). Slice the king oyster mushrooms (500 g) into thin (1 cm) strips.

    For the souvlaki: Place a pan over a medium heat and add a drizzle of olive oil (1 tbsp). Once warm, add the [sliced red onion] and a pinch of [salt], mix well and cook for 5 minutes.

    Add the [minced garlic] and stir for a further 1 minute until you've released the aromas.

    At this point, add the king oyster mushrooms (500 g) to the pan and fold them around until they've started to shrink in size, about 5-10 minutes. Stir through the dried oregano (0.5 tsp), dried thyme (0.5 tsp), fresh rosemary (0.5 tsp), and red wine vinegar (2 tbsp), and cook for 7-10 minutes (the longer you cook the mushrooms, the better).

    For the tzatziki: Grate cucumber (0.5) into a bowl and drain out any excess water. Peel and crush the clove (1 garlic). Place all of the tzatziki ingredients extra virgin olive oil (2 tbsp), cucumber (0.5), clove (1 garlic), plant yogurt (250 g), [squeeze of lemon juice], and [salt and pepper to taste] into a bowl and mix well until everything comes together.

    Prepare the rest of the ingredients: Peel and very finely slice the remaining red onion (1 small). Dice the tomato (1 large) and slice the remaining cucumber (0.5). Warm up the flatbreads (4) in a frying pan with a little olive oil (1 tbsp) before building the Gyros.

    Build the gyros: Add a large spoonful of [tzatziki] to the gyros before piling high with the souvlaki filling. Sprinkle with [sliced red onion], [diced tomato], [sliced cucumber], [sprinkle of chopped fresh parsley] and a [squeeze of lemon juice]. Once all of the ingredients are in the middle, curl the flatbread edges inwards, tighter at the bottom than the top, to make a cone-like shape.
