Instructions

  1. 1

In a food processor, pulse sliced white button mushrooms (4 cup), roasted cashews (1 cup) and salt (0.125 tsp) until a crumbly mixture forms. Pulse approximately 10-12 times, ensuring small bites of cashews and mushrooms remain, do not over-process.

  2. 2

Heat olive oil (1 tbsp) in a large skillet over medium heat. Add the mixture and cook for 4-5 minutes to heat through. Reduce heat to low and cook for another 5-8 minutes. The cashews should have very little crunch when tasted.

  3. 3

Use this vegan mince as a replacement for ground meat in your favorite recipes or in a vegan bolognese sauce.
