Whisk all dry ingredients for the breading together in a bowl, then spread evenly in a flat, shallow pan. Set aside.

If skipping gravy, proceed to batter section. Otherwise, whisk all dry gravy ingredients (all purpose flour (0.25 cup), nutritional yeast (1 tbsp), rubbed sage (1 tsp), salt (0.5 tsp), black pepper (0.5 tsp), ground thyme (1 pinch)) in a large skillet.

Toast dry gravy ingredients for [1-2 minutes] over medium-low heat. Slowly stir in unsweetened almond milk (3 cups).

Whisk gravy to remove lumps and stir often as it thickens. Once desired consistency is reached, remove from heat and set aside.

For the batter, whisk dry ingredients (garbanzo bean flour (0.5 cup), onion powder (0.5 tsp), salt & pepper (0.25 tsp)) in a small bowl.

In a separate bowl, whisk lemon juice (2 tsp) or apple cider vinegar into unsweetened almond milk (1 cup) to make 'buttermilk'. Pour into dry ingredients and mix until smooth. Pour batter into another flat, shallow pan.

Using one hand, place several pieces of [frozen cauliflower] into the wet batter, coating evenly. Then transfer to the breading.

Using your other hand, sprinkle breading (panko bread crumbs (1 cup), paprika (1 tbsp), garlic salt (2 tsp), ground ginger (1 tsp), dried mustard (1 tsp), celery seed (1 tsp), white pepper (0.5 tsp), salt (0.5 tsp), ground thyme (0.5 tsp), dried basil (0.5 tsp), oregano (0.5 tsp), black pepper (0.25 tsp)) on battered pieces and coat evenly before placing into an air fryer basket (or baking sheet).

Air fry at 390 degrees F for minutes (20). Check and shake after minutes (10).

For a regular oven, bake at 390 degrees F for [20-30 minutes]. Check and flip/turn every minutes (10) until crispy. This may take longer.
